The potatoes kindest to your blood sugar

Did you know that steamed potatoes will raise your blood sugar less than boiled, baked or fried?

The less you process food the more your body has to work to digest it, the slower the glucose will enter your blood and lower your blood sugar will spike.

And that is always a good thing, whether you have diabetes or not.

Lower spikes, means also fewer sharp drops in blood sugar and fewer cravings as your body has a steady supply of energy.

☝️If you have diabetes or prediabetes, potatoes, in any form, are to be consumed in moderation - the devil is in the dose here (test your blood sugar after eating them to figure out what your body can handle). And always combine with tons of fibre from veggies, protein and some good fats which will all help to flatten the spike.

Steaming your potatoes has the extra bonus of not having to consume the AGEs (advanced glycation end products) that come from frying and which, quite literally age you. (If you want to know more about AGEs read my blog on milk )

And by the way, you don't need a fancy steamer to steam your potatoes.

A steamer insert (one of those metal things that opens like a flower) costs <10€, fits any regular pot and can be thrown in the dishwasher. (Or if you want to go faster, use a pressure cooker with a steamer basket).

Just add some water in the bottom of the pot and steam until they are soft.

Serve with butter or olive oil, salt and dill. 👌
