THE Winter Salad

Do you tend to default to tomatoes and cucumbers and wondering what else you could use for a quick salad?

Here is the thing - if you are trying to go for nutrient density, tomatoes and cucumbers are not the best option in the winter. The further away from the equator you live, the longer your tomatoes and cucumbers have travelled to you (usually in bullet proof packaging, sprayed with stuff so they can get to you intact and loosing their nutrients along the way).

So here is a good winter alternative for you. If you have a food processor or electric grater this would take you about 5 mins. 

It keeps well for the next day or two.

If you are adventurous, you can even add a clove of grated garlic and some fresh dill.
